BLT Chopped Salad with Homemade Ranch Dressing

This cool, crispy take on the classic sandwich is the perfect salad for hot summer days.

Turkey bacon, shredded cheddar cheese, fresh roma tomatoes, and a super easy homemade dressing make this simple salad “ooh-and-ahh” worthy at the picnic table, and if your family loves it as much as we did, they’ll be going back for seconds! 🙂

One quick note on the turkey bacon (which we love! It’s an awesome heart-healthier choice for all our favorite bacon-containing recipes) – My favorite way to make it is on a sheet pan in the oven. Just lay 8 slices on an ungreased cookie sheet and bake for 20 minutes in the oven at 350 degrees. They’re perfectly crispy and ready to chop up for this great salad!

BLT Chopped Salad with Homemade Ranch Dressing

Ingredients:
4 c. mixed leafy greens (spinach, arugula, artisan lettuce, etc.)
2 c. chopped iceberg lettuce
6 pieces turkey bacon, fully cooked and finely chopped
1 c. diced roma tomatoes
1/4 c. shredded cheddar cheese

Dressing:
2/3 c. plain yogurt (or 1 8 oz. container)
1 tsp. yellow mustard
1 Tbsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
1 Tbsp. thinly chopped green onion
1 tsp. dried chives

Combine the greens and lettuce and stir gently to mix. Top the greens with the bacon, tomatoes and cheese.

To make the dressing, Simply combine all the dressing ingredients and whisk gently until combined.

Drizzle the ranch over the chopped salad and serve cold!
