Apple & Honey Oatmeal Bars

Oats have been number one on my baking ingredient list lately. They’re filling, full of good nutrients, and naturally gluten free (and great for mamas who are nursing newborns, too.)

These oatmeal bars are sweetened with brown sugar, honey and applesauce, and have just the right amount of spice for either a yummy midday snack or a delicious ending to a meal.

Apple & Honey Oatmeal Bars

*Makes 9 squares
*30 minutes

Ingredients:

2 3/4 c. quick oats
3/4. c. brown sugar
1 egg
1/3 c. honey
1/4 c. vegetable oil
1/4 c. unsweetened applesauce
1/4 c. milk
1/4 tsp. ground ginger
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
*extra cinnamon for sprinkling 

Preheat oven to 350 degrees F.

Combine oats, sugar, salt, ginger, cinnamon, baking soda, baking powder and salt in a large mixing bowl. Stir with a rubber spatula. Add the honey, applesauce, milk, oil and egg. Stir again to mix well. Pour into a greased, square, 8 in. x 8 in. baking pan. Ssprinkle extra cinnamon on top for a beautiful color and flavor on top. 🙂

Bake for 21-23 minutes, or until top is golden brown. Allow at least ten minutes to cool before serving. Slice and enjoy!

I devoured two of these plain after lunch today, but would  gladly dump a giant heap top  these with a small bit of whipped cream or vanilla ice cream for something more decadent! I love the way the spices come through in the just-crispy-enough crust and soft inside.

Bundle helped make these, and helped eat them too. With this recipe being kid, husband, and nursing-mama approved, we’ll definitely be making these again soon.
