Salted Caramel Chex Popcorn

Any sweet and salty snack lovers out there?

This pregnancy I’ve definitely been craving BOTH! Thankfully, this lighted salted, caramely snack really gratifies those crazy cravings.

Bonus? We’re up for bringing snacks to a homeschooling meeting next week, and you can make this gluten and nut free, kid-friendly snack in a pretty big batch. I’m excited to hang out with other homeschooling moms and enjoy watching our kids play (and eat!) together.

Salted Caramel Chex Popcorn

*Takes 10 minutes
*Makes 12 – 14 cups of snack mix!

Ingredients:

8-10 c. air-popped popcorn
4 c. rice chex cereal
1/4 c. (1/2 stick) margarine
1/2 c. brown sugar
1/2 tsp. salt

Combine the cereal and popcorn in a large container with a lid. Heat the margarine over the stovetop in a small saucepan on medium-low heat. Heat until just melted and slightly bubbling. Add the brown sugar and salt, and stir with a rubber spatula until all the sugar is dissolved, but not boiling. Pour the hot mixture over the cereal/popcorn mixture. From here you can either stir gently to coat the mix with the caramel or you could put the lid on and shake the container. 🙂

My dog heard me shaking the tupperware and was convinced he was getting some! Ha.

That’s all there is to it! It’s ready to eat within minutes – and it is addicting straight off the heat – and it keeps well for up to a week.

Last time I made this (yes, because of another pregnancy craving) it was eaten by all of us in less than 24 hours. This time I’ll be labeling the container with a post-it, so no one (especially me!) snags a handful before that meeting!
