Needing a quick and easy, gluten free treat for St. Patrick’s Day? Look no further.
One thing I often miss about a non-gluten-free diet are the sweet treats – especially ice cream sandwiches! They’re such a perfect little dessert to informal get togethers, kid’s birthday parties, or just lounging in the backyard on a sunny day! These miniature ice cream sandwiches are naturally gluten free and the soft, peanut-buttery cookie makes them even more decadent than a store-bought sandwich. The sprinkles and mini-size just make them more fun! I’ll be honest, I make the cookies in this recipe way more often than St. Patrick’s Day. 😀
Gluten Free Leprechaun Ice Cream Sandwiches
*Takes 20 minutes, + 1 hr. chill time in freezer
*Makes 12 mini ice cream sandwiches
Ingredients:
1 c. creamy peanut butter
1/2 c. unsweetened cocoa powder
1 Tbsp. baking powder
1 egg
1 c. brown sugar
1 1/2 c. vanilla ice cream *adjust to your own taste!*
green sanding sugar or sprinkles
Preheat the oven to 350 degrees F and grease a large baking tray. To make the cookies, stir the peanut butter, cocoa powder, baking powder, egg and sugar together until well-combined, thick and sandy-textured.
Form 24 small, round, balls of cookie dough (about 2 in. in diameter) and press into the baking tray with a fork, like traditional peanut butter cookies. 🙂

Bake for 8 minutes. Remove and allow at least ten minutes to cool. More cooling time = better ice cream sandwich structure.
Sandwich 1 1/2 – 2 Tbsp. vanilla ice cream between two of the cookies and press together until the ice cream just reaches the edge of the sandwich. Roll the sides of the sandwich in the green sprinkles.
From here you could plate, individually wrap, or refreeze these little guys for enjoying whenever you want.
How cute do these look? I was initially hoping these would actually last through until St. Patrick’s Day on Friday, but my daughter is having some friends over tomorrow to play…I’m thinking those little leprechauns might need a leprechaun-sized snack in the afternoon!
