Cinnamon Vanilla Valentine Pancakes

Happy Valentine’s Day, friends!

With Valentine’s Day falling on a Tuesday this year (and with an otherwise pretty full calendar this week), we didn’t plan anything big. But it’s sometimes the little things that make the best memories, right?

I decided yesterday to prep a fun and simple Valentine breakfast for our family this morning. Pink, heart-shaped pancakes with strawberries , yogurt, and orange juice – and of course, coffee for me and Hubby – made the menu.

These soft, fluffy pancakes are gluten free and dairy free. I actually mixed up the batter last night, covered it and set it in the fridge so there would be less to prep this morning. If you’re planning on making this ahead, you may need to add a little water  and stir the batter again before cooking the pancakes. 🙂 It was nice to have something fun already prepped and waiting this morning, with no fuss.

Cinnamon Vanilla Valentine Pancakes

Time: 15 minutes
Makes: 4 large pancakes or 7-8 small ones

Ingredients:

1/2 c. oat flour
1/2 c. gluten free all-purpose flour
1 Tbsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
2 Tbsp. white sugar
1 egg
1/2 c. + 2 Tbsp. vanilla flavored almond milk
5-6 drops of red food coloring

Combine the flours, baking powder, cinnamon, salt and sugar in a large mixing bowl. Whisk until there are no lumps left. Add egg, milk and food coloring, and stir with a rubber spatula until well combined. Heat a large skillet on medium heat and spray with cooking spray. Pour the pancakes into heart shapes and cook for a couple minutes on each side, or until the bubbles rise to the top of the pancake.

I’m no artist, so this is how I created the heart shapes – one oval next to another oval. That’s it! 🙂

I love how they turned out! Hubby ate these with peanut butter and syrup, but Bundle and I are yogurt lovers and used vanilla and raspberry yogurt to top these little guys. The cinnamon dust and heart-shaped strawberries were just for fun.

So without much fanfare or formality, we ate our little, pink breakfast while chatting over coffee and juice, and reading stories and poems from our Bible story book.

I think Valentine’s Day is off to a pretty wonderful start.
