Making this recipe was a late night (chocolate-craving-induced) decision, so the name for these cocoa, chocolate chip, oat and banana squares is definitely goofy. But don’t let the name fool you! They’re quick to make, perfectly delicious, and a healthful choice for on-the-go snacking.
My chocolate cravings were kicking in, but I wanted to make something that could really fuel my mornings and be healthy for Bundle to eat. The oats and banana really help fill the recipe out, and the cocoa and chocolate chips studding the top make it feel really decadent.
Chunky Monkey Breakfast Squares
*25 minutes, makes one 8 x 8 in. pan (about 9 squares)
2 1/2 c. oats
1 overripe (or nearly overripe) banana, mashed
1/4 c. milk
1/4 c. unsweetened cocoa powder
1/2 c. brown sugar
2 Tbsp. baking powder
1/2 tsp. salt
small handful of semi-sweet or dark chocolate chips
Preheat the oven to 350 degrees F. Combine the oats, mashed banana, and eggs and stir until well incorporated. Mix in the milk, cocoa, brown sugar, baking powder, and salt. Stir again. The mixture will be lumpy and brown, but you’ll want to make sure all the lumps of sugar and baking powder and cocoa are stirred out. Pour into a greased 8 x 8 in. baking pan and stud the top with chocolate chips. Bake for 20 minutes. Remove from oven and allow at least 20 minutes to cool (or the chocolate chips will make it hard to slice the bars.) Slice into 9 pieces and enjoy!
Right out of the oven, these are heavenly. Those slightly melted chocolate chips really make these feel like dessert rather than something so healthy! Next time, just for chocolate’s sake, I may end up putting a 1/3 c. chocolate chips INTO the batter, too! 😀
These squares are perfect for wrapping up or storing in small containers for on-the-go snacking, but also taste amazing alongside a bowl of vanilla yogurt for breakfast.
