No-Bake Peanut Butter Chocolate Chip Granola Bars

Sometimes you just need an immediate snack. No prep, no fuss…and most conveniently, something out of a wrapper.

Since it can be tough to find time for snack-prepping, and since pre-packaged snacks can get expensive, I decided a few years ago to create my own. Today, I want to share it with you!

This recipe makes 10 granola bars that sit ready for snacking in the fridge. Perfect for kids headed out to practice, or hungry parents in between meals (or drives to practice!) They’re ready in less than 20 minutes, completely gluten free, and only have five ingredients. Although I feel I should warn you that in our house these granola bars sometimes don’t make it to the “packaging stage.” They’re delicious straight out of the pan! 🙂

No-Bake Peanut Butter Chocolate Chip Granola Bars

Ingredients:

2 1/2 c. gluten free oats
1 c. creamy peanut butter
1/4 c. honey
1/2 tsp. salt
1/3 c. chocolate chips

Combine all ingredients in a large mixing bowl. When the peanut butter is well-mixed throughout the other ingredients, pour the mixture into a lightly greased 8 x 8 in. baking pan. Grease your fingers, and press the bars into the pan. You’ll want to squish the mixture pretty firmly, so that bars stick together well. Set the pan in the freezer for ten minutes. Remove and cut into ten equal bars. Wrap bars individually in tin foil, plastic bags, or plastic wrap, and place in the fridge for up to two weeks.

With a weekend full of holiday activities (some of our evenings are even double-booked!) I am so thankful I had time to get these in the fridge.
