It’s December, it’s December!
If you can’t tell by my enthusiasm and those adorable snowflakes falling on my background, I LOVE the holiday season, and hitting the first of December feels like a happy milestone each year. Plus, it signals (at least for our house) the beginning of holiday baking!
Living gluten free means a lot of substitutions and creative thinking in the kitchen, especially around the holidays. Sometimes it means doing extra research on simply leaving the gluten (or in this case, flour) out completely. Over the years, I’ve grown to love these gluten free kitchen experiments, and tonight’s experiment is no exception.
I looked up — thanks to a current pregnancy craving — several flourless chocolate cake recipes. I decided to combine several and make my own! Bundle helped. Cake baking is always more fun with a friend. 🙂
Here’s what I did and how it turned out!
Flourless Chocolate Torte with Dark Chocolate Glaze
Torte Ingredients:
1 c. semi-sweet chocolate chips
1 stick butter or margarine
3/4 c. white sugar
3 eggs
3/4 unsweetened cocoa powder
Glaze ingredients:
1/3 dark chocolate chips
1 Tbsp. butter
*powdered sugar for dusting, if desired
Preheat the oven to 375 degrees F. Butter/grease a round spring form pan.
Melt the butter and chocolate chips in a large saucepan or skillet over medium-low heat. (Stir pretty frequently so the chocolate doesn’t burn.) When chocolate mixture is just melted, turn the heat off and add the sugar. Slowly mix until sugar is dissolved, pour the warm chocolate into a mixing bowl.
Add the cocoa and the eggs and mix well with a rubber spatula or spoon. Pour batter into the spring form pan. Bake for 20 minutes, and cool for at least 10 minutes.
While the cake is baking/cooling, melt the dark chocolate chips and butter in a small bowl in the microwave on high for two 15 second intervals or until chocolate has just melted.
Cover the torte in glaze in whatever pattern you like. I thought about drizzling, but then my cravings said just spread it out over the whole thing! Ha. No regrets!
I absolutely love how this experiment turned out. The torte is decadent, moist and just the right amount of sweet (and totally gluten free!). I was thinking between bites that it would pair perfectly with a glass of milk or shot of strong espresso. This is definitely a “make again” in our house now!
