Comfort food is a weakness of mine, and sometimes, there’s nothing like a good ol’ baked Mac & Cheese.
However…the pasta and cheeses in stock at our house were hand-selected by our budget this month, so this is my less expensive take on a classic favorite. Enjoy!
1 c. milk
1 c. shredded cheddar cheese + 1/4 c. for topping
1/2 tsp. salt + a bit extra for salting the pasta water
1 tsp. dried basil
1/4 tsp. ground, black pepper
1/2 tsp. granulated garlic
16 oz. or 1 lb. penne pasta
5 Tbsp. butter
1/4 c. grated parmesan cheese
Preheat the oven to 350 degrees F. Grease a 9 x 13 in. baking pan.
Lightly salt the pasta and boil on high heat for twelve minutes, or until pasta is al dente.
Combine the milk, cheddar cheese, salt, basil, pepper and garlic. Stir together to mix. When pasta is cooked, drain it and pour into the greased baking pan.
Divide the butter into several quarter size dollops, and sprinkle evenly across the top of cooked pasta. Pour the cheese mixture directly over the pasta and butter, coating as evenly as possible. You may need to “spread” the cheese with a spoon. Sprinkle the grated Parmesan over the top of everything.
Bake for twenty-five minutes.
Remove from oven and sprinkle the remaining cheddar cheese on top of the dish.
Allow five minutes of cool time, and devour!
The day care kiddos and Bundle loved it, and Hubby mentioned this morning that he’s been thinking of the leftovers! Come to think of it…me too.
Cheap, easy, and delicious. That’s my kind of meal.
