Honey Lime Fruit Salad

I’ve already been posting summer fresh fruit recipes, but I couldn’t help to write down one more… I just can’t get enough of the in-season fruit right now!

Today I made this delicious fruit salad in less than five minutes and paired it with omelets and honey cornbread. So good. It’s perfect for picnics, potlucks, cookouts, and of course, simple meals on your own family dinner table.

Ingredients:

1 ripe peach, peeled, chopped & pitted
1 ripe mango, peeled, chopped & pitted
1 ripe kiwi, peeled and chopped
1/2 c. blackberries
1/4 c. blueberries
1/4 c. lime juice
1 Tbsp. honey
1 Tbsp. white sugar

Mix all fruit together in a large bowl. Whisk together the lime juice and honey in another small bowl until honey is no longer visible as a solid mass. Pour the lime and honey mixture over the fruit. Sprinkle with sugar and serve chilled.

**Edit**Every kind of honey has a different flavor. My family said the salad would be too sour without the honey and sugar, but other’s have mentioned that the honey made their salad too sweet. These recipes are simply meant to inspire, so please play around and try different ingredients and measurements with them! Tell me what you tried, and how you like it!
